Hey guys!

Thanks to you who ordered last week! I hope you enjoyed the pulled pork and shredded beef enchiladas.

So this week it is all about chicken...not far any particular reason other than I am in the mood to cook it and hopefully you are in the mood to eat it!!

Meal #1:
Roasted Chicken with fresh herbs and roasted vegetables. Served with Garlic Mashed Potatoes.
This Roasted Chicken is seasoned with plenty of fresh herbs like rosemary. Serve Roasted Chicken with Veggies and Gravy over the Garlic Mashed Potatoes.

Meal #2
Cajun Chicken Pasta with Caesar Salad.
One of our favorites! This is a cream based pasta seasoned with Cajun Spices and Green and Red Bell peppers.
Served with a Caesar salad with Parmesan Cheese, Creamy Caesar dressing and Croutons.

Whats for Dinner is back!

Whats for Dinner is back!

I feel like it has been so long since I posted...I really had to think about what my username and passoword were to get signed in!

The last couple of weeks have been fun but very busy...I actually could have used a dinner service myself. We probably ate out way too much, but sometimes life just calls for a drive-thru. Although, we have been making healthier choices. Thank God for $5 foot longs, right??

So this week I had a couple of request so the menu will be...

Shredded Beef Enchiladas with Peruvian re fried beans.
These Enchiladas are made with a homemade green sauce.
Each meal comes with two Enchiladas, if you would like a 3rd let me know and you can actually have as many as you like for $1 more per Enchilada.

Also making this week

Pulled Pork sandwiches with slaw and homemade mac & cheese.
Each meal comes with two sandwiches and slaw for the side or as a garnish for your sandwich(the best way to go).

I am including a dessert with this meal!
Lemon Squares. 1.50 per square.
These have fresh lemon juice and zest and cream cheese. So good!

Whats for Dinner? 5/23/2010

Hey guys!

So this is the deal...This weekend and next weekend is crazy busy! We are having a farewell lunch for my brother-in-law and sister-in-law who are moving to Houston at the end of the month :(
There are also a few other things going on as well that I have volunteered my time too. Next weekend we have out of town guest coming in. But I really want to cook so, I am going to do one meal this week and one meal next week. I am choosing the meals that I have received the most positive feedback on.

This coming week I am making...

Chicken Pot Pies...
You will get two individual pot pies per order and a side salad with a vinaigrette dressing.
The pot pie is a traditional pot pie with a buttery crust. Ed and I love these and if you have never had them I think you will enjoy them too!

Menu for May 16

Hey Guys...I hope you are having a lovely week!

I am only doing two meals next week because Ed and I are going on a date so I have to finish early! Woo Hoo!!

Here Goes:

Meal 1:
Pot Roast with Gravy and Mashed Potatoes and Carrots Sauteed in Butter and tossed with Fresh Dill.

Meal 2:
Chicken Broccoli Casserole with Corn on the Cob w/ Lots of Garlic & Fresh Parsley!

The Chicken Broccoli Casserole is Casserole with a Kick! It is a creamy casserole with Chicken Breast and Broccoli topped with Pepper Jack Cheese(Thats the kick!)

Holy Cow This week went by really fast!!

I hope you all enjoyed your meals last week.

I am going to be short and to the point this week because I am already running behind...I think I am going to start posting my blog on Thursdays...Is that o.k. with you guys? Wednesdays get here so quick!

So, The menu for next week is:

Meal 1:
Chicken Cordon Bleu with Roasted Asparagus

This is a traditional Chicken Cordon bleu recipe which is chicken breast stuffed with Ham and Provolone Cheese and then baked in the oven. It is served with a Honey Mustard Dressing. The roasted asparagus will be seasoned with butter and fresh garlic.

This recipe reminds me of the Turducken...you may be wondering what that is and only in Louisiana can they come up with something like this...it is a turkey stuffed with a duck stuffed with a chicken...crazy, huh? I have not been able to bring myself to eat one but they are all the rave!

Meal 2:
Soup and Salad
Baked Potato Soup Garnished with Sour cream, Cheddar cheese, Bacon Bits and Green onions.

For some reason I always think of soup as being a healthy dish...well...that is all about to change, ecspecially with all of these toppings! O.k, O.k, I will serve a salad with it!

Meal 3:
Chicken Enchiladas with Red Sauce, Spanish Rice and Fiesta Dip with Tortilla Chips.

O.k. I will try to make these Enchiladas as authentic as possible but the Fiesta Dip is a recipe I remember eating in Mississippi...We will call this a fusion dish. It is made with Black Beans, Black Eyed Peas, Tomatoes, Bellpeppers, Roasted Corn, Cilantro, and Italian Dressing. You can eat this as a salad or with Tortilla chips, which will be provided with your meal.

Hello my hungry friends!

I hope you are having a pleasant week...it's a little chilly outside, huh?

The menu for next week is...

Meal 1

Traditional Chicken Pot Pie and Watercress salad with Toasted Pecans and Dried Cranberries.

I made a chicken pot pie a while back and was not super happy with the recipe so I did some research and this one looks yummy and had a ton of great reviews. My sister-in-law also cooked it and said it was a very good recipe. I am also going to try and find a jumbo muffin pan so I can make these as individual pot pies. I love it when I have an excuse to buy kitchen stuff! ( The real reason I am making Chicken Pot Pie:)

Meal 2

Chicken and Sausage Gumbo with white rice and Potato Salad

One of my very pregnant friends requested this so I am putting it on the menu. You can't say no to a pregnant momma, right?!
O.k. if you are not sure what Gumbo is...Google it.

Meal 3

Smothered Pork Chops, Mashed Potatoes and stewed green beans.

I have been wanting to do pork chops for a while and this is a recipe that reminds me of the way I ate pork chops when I lived in Mississippi, so I am going for it. I was looking for some unique sides that have not been on the menu before but these pork chops have a gravy so how could I not pair them with mashed potatoes and so far everyone has really liked the stewed green beans with bacon, onions and rotel tomatoes.(These are a little spicy)

Happy Wednesday!

Menu for this week is...

Meal 1:
Chicken Pesto Penne Pasta with Spinach and Caesar Side Salad
Ed loves Pesto so he is going to be excited about this meal!

Meal 2: Taco Soup Garnished with Sour Cream, Cheese and Tortilla Chips

I checked the weather for next week and it is still cool enough for soup. I am assuming that I am not the only one who loves a bowl of soup on a cool day. This one is really yummy because of all the goodies on top!

Meal 3: Pulled pork sandwiches with Cole slaw and Homemade Mac' N Cheese

I am excited about this meal because I am trying a new Mac N Cheese recipe. They have this cute lil' store by house it is called Ma' N Pa' Grocery. Sarai and I walk down there every Tuesday while Ed is in school and we get a snack. I tried there Mac n Cheese and it was sooo good. I think I've figured out everything they put in it. It's almost like a mexican style Mac n cheese with peppers in it! ( but it's not spicy) Anyway, I can't wait to eat it again!

Menu for April 11

I hope all of you had a great Easter! We are still having Easter egg hunts around the house!

So, this is what I am cooking for next week...

Meal 1

Brown Sugar Meatloaf
I love Meatloaf, I just wish it had a different name. Any Ideas what we could call it other than Meat loaf?

In the mean time this meatloaf has a brown sugar and ketchup glaze. It's good! I promise!

Your side for the meatloaf will be Potatoes Au gratin. I made these for Easter and they turned out really good. They are like scalloped potatoes but better. Potatoes sliced thin and baked with Heavy cream, chives, Parmesan cheese, Thyme until bubbly and golden brown on top.

Meal 2

Roasted Chicken with fresh herbs and roasted vegetables. Served with Garlic Mashed Potatoes.
This Roasted Chicken is seasoned with plenty of fresh herbs like rosemary. All of the left over juices from the chicken and veggies are used to make a white wine gravy. Serve Roasted Chicken with Veggies and Gravy over the Garlic Mashed Potatoes.

I can't wait to eat this one. It's a perfect spring time dish with all the veggies and fresh herbs.

Meal 3

O.k. so I am not sure how many of you will order this one, but thats o.k. because I am really making this for me.
I made a ham for Easter and I saved the bone to make a classic southern dish...Red Beans and Rice.
Red beans are slow cooked Ham bone and smoked sausage and veggies for seasoning. Served over white rice and homemade cornbread. Enjoy!

If you are cooking a special lunch for your family on Easter and your not up to tackling dessert I will be offering a few desserts perfect for the Easter holiday!

Lemon Blossoms

These are mini cupcakes baked with lemon pudding to make them super moist and then dipped in a lemon glaze made with fresh lemon juice and zest! My brother gave me this recipe...they are very tangy, sweet and fresh. Perfect dessert for the spring!

$6 for two dozens

My Grandmothers Carrot Cake

This carrot cake is three layers of super moist cake filled with yummy ingredients like carrots and pecans. (The first time Eddie seen me make this cake he said, " Carrot Cake really has carrots in it!") Each layer is covered in Maple Cream Cheese icing with chopped pecans. So Yummy! P.S. I can also make these into cupcakes instead of a three layer cake.

$20 a cake

Pineapple Coconut Cake

This is a yellow cake layered with pineapple filling and vanilla pudding. This is a 9" x 13" Sheath Cake. It is topped with a cream cheese and whipped cream icing with finely shredded coconut. Cake is topped with toasted coconut.

$16 a cake

Red Velvet cupcakes with Maple Cream Cheese frosting
I am super excited to make these cupcakes for many reasons. 1) I love red velvet cupcakes and 2) I bought the cutest cupcake liners and I really want to use them.

$1.50 a cupcake (minimum purchase 10)

Menu for week of March 28 - April 4

Wow, Can you believe it is almost April! Crazy!

I am super excited about the spring! Every spring I start craving Bacon, Lettuce and Tomato sandwiches on toasted bread with salt and pepper and a tall glass of sweet ice tea. Doesn't that sound good?!

So, I hope you enjoyed your meals last week. So far I have received good feedback, but if you have any pointers you would like to give me feel free. This is a new venture for me so I welcome any feedback you would like to give so that I can make this service better for you.

O.k., the menu for next week is...

Meal 1

Classic Lasagna with Ground Beef and Ground Italian Sausage
Spinach Salad with a warm dressing made with bacon, brown sugar and raspberry liquor.

Meal 2
Pot Roast with gravy
Garlic Mashed Potatoes
Green Beans stewed with Bacon and Tomatoes
(Included this on the first menu but a few people wanted to order and did not get a chance, so I am putting it back on)

Meal 3
Poblano Chicken Chowder: This soup has the obvious and is cream based. It also has cilantro, just want to put that out there for all of you cilantro haters! :) ( my first time to cook, but my brother and sister-in-law gave me the recipe and said it was delicious!)
Garnished with cheese and homemade croutons
*If you would like to add the spinach salad to this meal just let me know.

Desserts for Easter Holiday

If you are cooking a special lunch for your family on Easter and your not up to tackling dessert I will be offering a few desserts perfect for the Easter holiday!

Lemon Blossoms

Dinner is Served plus Dessert

I hope all who ordered last week are enjoying your dinners! It has been nice to have dinner already in the fridge so all I have to do is heat it up and Dinner is served. It helps us fight the temptation to eat out and spend money that we could be saving for more important things.
This week I am including a dessert for $1 extra per order. I am making home made brownies...they are so good and made with quality ingredients...way better than the box! If you are not ordering a meal and you just want dessert that is fine just let me know.

So, the menu for next week is...

Meal 1

Cajun Chicken Pasta w/ Caesar Side Salad
Penne Pasta, Green and Red Peppers, Grilled Chicken, Mushrooms, Parmesan cheese cooked in a cream sauce. (YUMMY!)
I included this in the menu again because a few people wanted to order it the first week but didn't get a chance too.

Meal 2

Chicken Tortilla Soup
This is by far one of the best tortilla soups I have ever eaten. It has the basics in it like Chicken, black beans , hominy, stewed tomatoes and chilies.
To garnish the soup you will get, tortilla chips, shredded cheese and fresh cilantro.
This soup is really light and fresh. I just started cooking it but it quickly became one of our favorites.

Meal 3

Shredded Beef Enchiladas with Spanish Rice
O.k. I have to be honest and tell you I have never actually cooked this as a meal, but I got the idea from me using the left over roast I cooked a couple of weeks ago and putting it in a flour tortilla with melted cheese. It was soooo good. So, I am confident this dish will be yummy!

This meal will come with two enchiladas...add an extra $1 if you want 3 enchiladas.


*I put veggies in my rice...It gives Sarai an opportunity to get in a few more veggies for the day.

If this is your first order add $2.50 to the final cost of your order so I can buy your containers. This is only for your first order because I will continue to re-use your containers(if you return them to me:)

Each adult meal is $5 , children under 10 are $2, children under 2 are free.

So this is whats for dinner.

Thanks so much to my friends who ordered from me last week. I had three meals on the menu and everyone ordered the same meal...the pot roast. This was fine with me because it made my life very easy and it is by far one of my most favorite meals to cook. I cooked it exactly the same way my grandmother and mother always cooked it. It was the meal always prepared for special guest at our house and everyone I cooked for last week is special to me!

Whats for Dinner?

My brain has had a busy week. You know how you have a small thought and only in a few minutes it becomes huge, like a thriving business, your dream house, a new recipe, a conversation with your boss...etc. Well that is what happened to me this week, a friend made a comment that gave me an idea that has grown into a possibility of something really cool. So here goes, I cook for my family a few times a week and I am very lucky that I can stay at home with my daughter and have time to cook. I realize alot of people are extremely busy with day to day activities and they dread the inevitable question...what's for dinner? So, If you are too busy to cook and would like to enjoy a home cooked meal at least once or twice a week without the stress of long lines at the grocery store and a huge mess in the kitchen let me cook for you.

I will post my menu for the week on the previous Wednesday, you need to order by Friday at midnite, and your meal will be delivered to you on Sunday.
